Fun & Easy Mother's Day Brunch Menu:
If you are looking to surprise the special woman in your life with a spectacular Mother's Day Brunch, look no further than these easy, fun recipes! As an added bonus, kids will have a blast helping you prepare these delicious, simple recipes:
Easy Ham & Cheese Quiche:
This recipe is adapted from an old family recipe. It is easy, quick and a sure-fire hit.
Preparation:
Pre-heat oven to 350 degrees. Grease 10 inch pie plate with Crisco or butter.
Ingredients:
1 Cup Diced Ham
1 Cup Grated Swiss Cheese
1/3 Cup Finely Diced Onion
2 Cup Milk
1/2 Cup of Store Bought Biscuit Mix
1/8 tsp. pepper
4 eggs
Put ham, swiss cheese and onion in bottom of greased pie plate. Put all of the milk, Biscuit Mix, eggs and pepper in blender together. Blend together for 1 minute and pour over the ham, swiss cheese, and onion mixture in pie plate. Bake for one hour until golden brown. Remove from oven and let the quiche rest for ten minutes before serving.
Spectacularly Simple Fruit Salad:
1 Grapefruit
1 Orange
1/2 Can Pineapple Chunks
1 Banana
1 Cup Grapes
1 Cup of Strawberries
Splash of Juice
Split the Grapefruit in two halves along the 'equator' of the fruit. Take a knife and separate the sections from the membrane and the rind of the fruit. Use a grapefruit spoon to scoop out the flesh. Squeeze the grapefruit over the fruit salad bowl for juice. Peel the orange and cut into sections. Slice the banana. Wash the grapes and strawberries. Mix all the fruit together in large bowl. Add a splash of juice over the top to help prevent the bananas from browning. Although this recipe can be prepared a day in advance, you may want to wait until the last minute to add the banana in order to keep the fruit as fresh as possible.
Delectable Pecan Tassies:
These delightful little tarts will provide an elegant little dessert for your Mother's Day Brunch. Please note that you will need two mini-muffin pans (12 muffin spaces per pan) for baking these scrumptious little treats.
Dough:
1 Stick Butter or Margarine
3 Ounces Cream Cheese
1 Cup Flour
Pinch of Salt
Mix dough ingredients with a pastry blender or fingers until it forms in a ball. Chill dough for one hour in refrigerator. Divide into 24 small balls after chilling. Press each individual ball of dough into bottom of each mini-muffin opening to form a 'crust' for each little tart.
Filling:
1 Egg
3/4 Cup Brown Sugar
2/3 Cup Coarsely Chopped Pecans
1 teaspoon Vanilla
1 Tablespoon Butter or Margarine
Stir filling ingredients together until thoroughly mixed. Spoon 1 teaspoon of filling in each mini-muffin 'crust.' Bake at 350 degrees for twenty-two to twenty-five minutes. Remove from pans while pecan tassies are still warm.
